Abstract
The school canteens should be an area of education for the nutritional health of the child and the whole family. The current challenges of school canteens involve offering a quality, balanced and varied diet for children against the prevailing opulence diet in which dietary demands are more related to organoleptic characteristics and social values than to their nutritional quality.
