Resumo

El oxígeno implicado en la oxidación de substratos, para producir energía durante el metabolismo fisiológico genera sustancias tóxicas conocidas como especies reactivas de oxígeno (ERO). Bajos niveles de ERO son esenciales en gran cantidad de procesos celulares; la acumulación de éstos puede, sin embargo, causar graves daños en las macromoléculas biológicas. Por otro lado, el organismo se protege mediante una amplia variedad de mecanismos antioxidantes. El estudio de los daños inducidos por ERO y cómo el organismo se protege frente a ellos está adquiriendo una gran importancia en la práctica de la medicina humana, y veterinaria. El objetivo de este trabajo de revisión es: i) aclarar diversos aspectos del estado oxidativo, ii) analizar la influencia del estrés oxidativo sobre la salud del ganado vacuno teniendo en cuenta su estado fisiológico (gestación y parto) y el manejo nutricional y, iii) organizar la amplia literatura existente al respecto, y que puede ser de interés veterinario, de una forma rápidamente accesible.
